Stringy Meat

Yall have it right about the adrenaline affecting the meat.  A pig thats dropped dead nuts on the spot will generally taste better. But on the other hand, it usually doesn't happen that way. These FL hogs anyway are tuff as nails. Last one I shot at 40 yards w/ 12 guage  00 buckshot blew the bottom of his heart out collapsed both lungs and destroyed the liver. He dropped straight down jumped back up and ran about 40 yrds off in the bushes for he died. So really though the way it dies does matter, its more important the way you cook it.
